General building steps:

Yes it is very stable... the first flight might look a little jerky because i had too much throw... I changed the throws to 80% and 50% expo... cg at 60mm back.. right on the spar

These are the settings i have used for my setup on the Skyhook Discovery Mini.

Throws are set at 80% for ailerons and elevator, 100% for rudder. All have 50% expo. This is a nice gentle setting for easy cruising..... I also have the throws on a switch to go to 100% if I need more throw... but the current setting is what i was flying with on the videos i sent you.

I used 9 gram servos in the wings and fuselage, these fit in perfectly and work very well.

I used a 1000kv in-runner motor so the motor stays inside, looks neater and I also ran a 9×6 prop which has plenty of thrust.... I used a 30 amp esc which handles the load easily as this setup only draws 12 - 15 amps full throttle... much less on cruise as this model can fly at under half throttle..

I used a 2200mah 3s battery and had to add some noseweight right in the end of the nose to set the cg, which I set mine at 60mm back from the leading edge. This is a very safe, stable cg point for all flyers. My setup weighs 1150gms flying weight, this was with my basic camera installed.
